Tender Coconut Payasam

 Tender Coconut Payasam or Elaneer Payasam

It is a delicious, smooth dessert made by simmering milk with tender coconut water, tender coconut pulp, sugar, condensed milk and flavored with cardamom powder. It can be translated as Tender Coconut Kheer which is especially meant for festivals and functions.


The needed ingredients are,

Half cup of tender coconut pulp, one cup tender coconut water, one cup of milk, 3 to 4 tablespoons of condensed milk, cardamom powder (if needed), cashew nuts (as per your need) and half teaspoon or ghee. 



The procedure is so simple that you can make it within 20 to 25 minutes. The first step is to boil the milk and let it gets thicker than normal. Continue the process for about five minutes. Then cool the milk completely. On the other hand grind the tender coconut pulp, water smoothly. And remember to save some bits for garnish. In a separate pan add ghee and cashew nuts in it. The colour of the cashew nuts changes to golden which means it’s ready for the toppings. Now mix the ground pulp to the cooled milk and add the condensed milk along with the cashew nuts. Add cardamom powder if needed. 

The final step is to mix the whole thing well. And serve it chilled.
