Road side Kaalan

         Ah!! This is my favourites of the street food. It’s a kind of mushroom dish which is available on the road side and it’s the special and the famous street food of Coimbatore. It’s a combination of cabbage and mushrooms. 


It deserves the best seat for the texture and the taste it carries..!



        First we need to make the cabbage fries (pakkodas) to mix them with our final output. Wash, Clean and slice the cabbage into thin pieces. Chop the mushrooms into pieces. Take a big bowl add the chopped mushrooms and sliced cabbage into it. Add Maida, corn flour, salt, Chili powder and turmeric powder. Mix them and just keep it aside for about 20 minutes. The important thing is do not add water to it cause cabbage and mushrooms will contain enough water content which helps in maintaining the moisture level. Add some veggies if you need. 

       Heat oil in a pan or a big pot. Take small pieces from the mix and drop it gently in oil. You can just take some random shapes and place it gently in the oil. But remember they should be small. Just fry them and dry them. 


         Add all the ingredients listed and add half cup of water. Grind them into a paste. Take a big pan and add oil and curry leaves. Add finely chopped onions and stir them unit they turn into a light brown colour. Add our masala paste to the pan. And add a half cup of water and salt to it. Just remember that we added salt to those cabbage fries too so add salt cautiously. 

   Cook for 5 to 6 minutes. Mix the corn flour and water in a separate bowl. Add the mixture to our pan. If you need you can add some lime juice to it. It’ll increase the flavour. 






Remember our fries, Cabbage fries!!! Now it’s time to add them. Add them and toss them until they absorbs the gravy. Finish the dish with sprinkling coriander leaves on the top which adds more flavour to our dish. 



                                          Serve it hot..!!!
